ThisHon or “Real” Nigari is the finest & purest grade available. Contains natural magnesium as well as many beneficial trace minerals. Whoa! Minerals! Beware of lesser quality products referred to just as Nigari. Their purity ranges from 80-95% purity.

Raw Rutes Hon Nigari Flakes are 99.9% pure and is nothing more than naturally collected and sun dried water from the Sea of Japan. As a coagulant for homemade tofu, we suggest 1 tsp per quart of soy milk as a starting point.

Great tofu!

The nigari flakes did a fantastic job! The amount of curdling was excellent and the tofu had that great subtle flavor that I associate with excellent tofu like that from Central Soy Foods in Kansas or when Spring Creek Tofu was still around in West Virginia. I am completely happy and looking forward to making lots of great tofu!

Hello, I am happy I purchased this product. It is great quality. This produces a certain style of tofu, gypsum produces a slightly different version. If you do not know which you need, look at the ingredients on store bought tofu package. It will say which coagulant additive was used in production. Some use both! I like to use only nigari flakes.
