steel. 304 Food Grade Stainless Steel. The interior is constructed from the exact same material as the exterior for years of durability, and enjoyment with no leeching or off gassing. There's no plastics, BPA, Polytetraflouroethylene (Also known as PTFE or Teflon) or "Surgical Grade Polypropylene" as some many other companies use. No gimmicks. So if an entirely stainless steel dehydrator is what you've been seeking, your search is over!
